Chef Bain’s Pick Recipe

Warm balsamic strawberries over vanilla ice cream- serves 4
2 pints fresh strawberries, sliced in half
2 cups balsamic vinegar
2 sprigs fresh thyme
4 tbsp confectioners sugar
1 pint high quality vanilla ice cream

To prepare:
Pour vinegar in medium size sauce pan (must be large enough to fit all strawberries).  Cook vinegar over medium low heat with thyme sprigs until reduced 2/3’s down.  Remove the thyme sprigs(any leafs left over are fine).  Slowly wisk in the sugar.  Slowly add the strawberries, and cook for an additional 5 minutes.  The mix should have a syrup consistency.  Dish out the ice cream in bowls.  Spoon the strawberries over top.  Serve warm.
