Chef's Recipe for The Fountains at La Cholla
 

Pecan Crusted Salmon

Ingredients

4 6oz salmon fillets
3 tbs dijon mustard
3 tbs melted butter
2 tbs honey
1/3 cup seasoned bread crumbs
¼ cup flour
½ cup finely chopped pecans
1 tsp paprika
1 tbs seasoned salt
½ tsp black pepper
1 tsp granulated garlic
¼ cup extra virgin olive oil

1.  Combine mustard, honey, and melted butter in a bowl
2.  Combine remaining ingredients in a bowl, less pecans
3.  Dip fillets into honey mustard mix, coat with dry ingredients
4.  Pat pecan mix onto filets
5.  Fry in olive oil on medium heat 3 minutes each side until golden brown
6.  Serve with lemon wedges and minced parsley
